My Irish Grandmother married a man whose parents were from Austria/Poland. She used to tell stories about how her Polish mother in law who really didn’t speak English yet used to teach her how to cook Polish dishes and of course they were never good enough. Over the years she cooked many for us too. My favorite was Chrust. She always made around Easter and let me help, as long as I didn’t get near the fryer. It’s one of my favorite childhood memories.
Nana’s Chrust
4 egg Yolks. 1Tsp Vanilla
1 Egg White 1Tbs Rum ( Nana left this out)
1/4 Cup Powdered Sugar 1Cup Flour
1/2 Tsp Salt
Add salt to eggs and beat for 10 minutes. Add sugar and flavoring and beat until well blended. Fold in the flour. Transfer to well floured board and knead until dough blisters. Cut in halves, roll very thin and cut into strips about 4″ long. Slit each piece in the center and pull one end trough the slit. Fry in hot fat until lightly browned. Drain on absorbent paper and sprinkle with powdered sugar.
I can still remember standing on a chair and having the job of pulling the ends through while Nana fried them. Now that she is gone, I am happy to have those special memories.
